Kombu, Wild Sea Vegetable
Eden Kombu is a wide leafed deep sea vegetable that flourishes in cold northern waters. The choice grades grow where there are steady but moderate arctic currents. Eden Kombu is wild and comes from the north shore of Japan's northernmost island. Eden offers only the most tender central part of the leaf because it has the nicest flavor and texture. It is hand harvested, folded into strips and sun dried. Kombi is sometimes coated with a fine white powder, glutamate (an amino acid). This is what has made Kombu famous as a flavor enhancer. It's okay to rinse this off - there's plenty more in the leaf. Eden Sea Vegetables offer hope of rounded vegetable kingdom nourishment without dietary supplements.
Highly appreciated for its rare food value and flavor enhancing characteristics, Kombu has been considered a health food for centuries. Pickled, steamed, boiled, broiled, fried, ground, toasted, roasted and marinated... every imaginable preparation method has been used to open this storehouse to us. A piece of Kombu should be in every soup stock to enliven it. Kombu tenderizes beans as they cook; half a strip is sufficient for tenderizing and flavoring a pound of dried beans.
INGREDIENTS: Kombu (Laminaria japonica).
