• HEAVENLY TEA SCONES
• 1/2 pkg. scone mix (approx. 2 1/3 cups)
• 1/3 cup unsalted butter, chilled
• 1/2 cup heavy whipping cream
• 1 large egg
• 1 1/2 teaspoons vanilla extract
• Preheat oven to 350º. Sift dry ingredients into a bowl. Cut in cubed butter until mixture resembles coarse crumbs. Stir together cream, egg, and vanilla. Add creamed mixture to flour mixture and stir until combined. Pat dough into a 3/4" thick circle on a lightly floured surface. Cut into pie wedges.
• Option #2: Using a floured 2 1/2" cookie cutter, cut out shapes from 3/4" thick dough and place on a prepared sheet. Gather up the scraps and repeat until all the dough is used.
• Tops can be brushed with a mixture of 1 egg blended with 1 teaspoon water, if desired. Bake in hot oven for 10-12 minutes, until lightly browned. Cool on wired rack. Store in airtight container. Makes about 12 scones.
